In Yamagata, the cultivation of soba has been active since ancient times, and there was a custom of serving soba to relatives and neighbors. It is said that the origin of "Ita soba" (板そば) comes from its convenience for sharing among many people and being taken home as a souvenir for family members who were left behind.
